The present invention relates to a method for manufacturing a buckwheat baked chicken and a buckwheat baked chicken manufactured by the same wherein a more delicious buckwheat chicken can be manufactured by making chewing texture of the buckwheat baked chicken be soft, protecting juice, making the buckwheat baked chicken have a uniform shape and a uniform size, and including buckwheat. The method for manufacturing a buckwheat baked chicken include: a thawing step of thawing frozen-stored chicken tenderloin； a cutting step of cutting the thawed chicken tenderloin into cubes in the size of 3 cm x 3 cm； an immersion step of applying wheat flour batter by immersing the cut chicken tenderloin in the wheat flour batter in which a powder member, consisting of wheat flour as a main ingredient, corn starchy, refined salt, and roast seasoning, stirred eggs, and purified water are mixed； a buckwheat flour applying step of taking out the chicken tenderloin to which the wheat flour batter has been applied and applying buckwheat powder； and a quick freezing step of quickly freezing the chicken tenderloin to which the buckwheat powder has been applied. The thickness of the chicken tenderloin is 3cm x 3cm in the cutting process.본 발명은 메밀 베이크 치킨의 씹는 맛을 부드럽게 하고 육즙을 보호하여 거의 균일한 형상 및 크기를 가지도록 하면서보다 메밀을 함유해 보다맛이 좋은 메밀 베이크 치킨을 제조할 수 있는 메밀 베이크 치킨의 제조방법 및 그 제조방법에 의해 제조된 메밀 베이크 치킨에 관한 것이다.본 발명에 따른 메밀 베이크 치킨의 제조방법 및 그 제조방법에 의해 제조된 메밀 베이크 치킨은, 냉동보관된 닭 안심을 해동하는 해동공정과, 상기 해동된 안심부위 덩어리를 3cm x 3cm 정 사각형으로 절단하는 절단공정과, 상기 절단된 닭 안심을 밀가루를 주성분으로 하여 옥수수전분, 정제염, 로스트시즈닝이 배합된 가루부재와 풀은 계란과 정제수를 혼합한 메밀이 섞인 밀가루반죽에 담가서 밀가루반죽을 입히는 밀가루반죽 침지공정과, 상기밀가루반죽을 입힌 닭 안심을 건져내어 메밀 가루를 입히는 메밀가루 입히기 공정과, 상기 메밀가루를 입힌 닭 안심을 급속 동결시키는 급속동결공정을 포함하여 이루어지는 공지의 메밀 베이크 치킨이 제조된다. 상기 절단공정의 닭 안심 두께는 3cm x 3cm로 이루어지는 공정을 포함하여 제조된다.
