PROBLEM TO BE SOLVED: To industrially and advantageously produce the subject saccharides, having preventing effects on the denaturation of proteins and useful as foods, medicines and cosmetics by culturing a microorganism, belonging to the genus Oerskovial and having the ability to produce a trehalose in a specific culture medium and collecting the resultant product from the cultured product. SOLUTION: A microorganism, belonging to the genus Oerskovia and having the ability it produce a trehalose [e.g. Oerskovia xanthineolytica M-6 strain (FERM P-15433)] is inoculated into a culture medium containing sucrose and/or maltose as main carbon sources and cultured at 37 deg.C for 2 days by reciprocation shaking culture to prepare a seed culture solution, which is then added to the same culture medium as that of the seed culture and cultured at 37 deg.C for 3 days by reciprocation shaking culture. The resultant culture solution is then centrifuged to remove insoluble substances such as the microbial cell. The supernatant is treated by a high-performance liquid chromatography, etc., and purified to afford the objective saccharides, capable of manifesting sweetness of good quality, having preventing effects on the denaturation of proteins at the time of drying and freezing and useful as a sweetener, an extending agent, a preservation stabilizer for foods and medicines, a humectant, etc., for cosmetics.
