Prepn. of a sugar jelly prod. comprises intensively mixing at room temp. the following ingredients: sugar crystals, standardised fruit pectin, hydrolysed starch (DE = 10-40) and a pH regulating agent with a particle size less than that of the sugar. A small amt. of finely distributed water is then added with stirring until the mixt. is homogeneous.
