Disclosed is a method for producing a casein hydrolysate, comprising: a) adding to a composition comprising from about 5% to about 25% casein an endopeptidase having at least 70% identity to SEQ ID NO: 1; and b) incubating so as to hydrolyse the casein. Also disclosed is the use of a casein hydrolysate produced by the method and the use of a casein hydrolysate in a food product.
