The invention relates to the known concept of using preservatives to avoid rotting of byproducts during storage at the slaughterhouse and during transport, without using cold. The invention applies said preservatives under pressure, along with air also under pressure, achieving a mist of preservatives and a homogeneous distribution of same on the byproducts. Said procedure is carried out each time byproducts are introduced into the hopper, in a metered fashion and into the vertex of the cone and/or surface of the byproduct stored in the holding hopper, consisting of the stacked byproducts. In addition to storage, this is carried out without loss of leachates, a leak-tight hopper being used, thus maximizing the effectiveness of the preservatives. Optionally, the preservative can be incorporated during the phase of unloading the byproducts into the bin or receiving container, such that when storage does not result in loss of fluids from the byproducts, the bin or receiving container used may or may not be leak-tight.Partiendo de la idea en si conocida de utilizar productos conservantes para evitar la putrefacción de los subproductos durante su almacenaje en el matadero y durante su transporte, sin utilización de frío, la invención consiste en aplicar dichos conservantes a presión y acompañados también de aire a presión, de manera que se consigue una nebulización de los conservantes y un reparto homogéneo de los mismos sobre los subproductos. Esta maniobra se realiza cada vez que se produce una aportación de subproductos a la tolva, de forma dosificada y en el vértice del cono y/o superficie del subproducto almacenado en la tolva de espera, configurado por el apilamiento de subproductos. Además el almacenaje se realiza sin pérdida de lixiviados, utilizando para ello una tolva estanca. Se consigue de esta manera potenciar al máximo la eficacia de los conservantes. De forma opcional el conservante puede incorporarse durante la propia fase de descarga de los subproductos
