<；P>；PROBLEM TO BE SOLVED: To provide a method for stably enriching shogaols having an excellent physiological activity and pharmacological actions in a plant of the family Zingiberaceae in which effectiveness is expected as a material for functional foods etc., or in an extract thereof. <；P>；SOLUTION: A raw material derived from the plant of the family Zingiberaceae is used as it is or the raw material is mixed with a fermentation liquid, and then heated under conditions of 30-90°；C temperature and 50-90% humidity for 120-500 h to thereby convert gingerols in the raw material derived from the plant of the family Zingiberaceae into the shogaols.
