PROBLEM TO BE SOLVED: To provide a method for producing an extract having proteolytic activity from a mushroom, particularly a mushroom extract having high proteolytic activity, free from the problems of the contamination and staining with microorganisms and characteristic odor of mushroom and usable in a food field.SOLUTION: The method for producing a mushroom extract having proteolytic activity comprises the following steps (1) to (3) (1) a step to extract a mushroom extract from a mushroom with a buffer solution having a pH 5-7 and salt concentration of 10-300 mM, (2) a step to filter the extracted liquid obtained by the former step by using diatomaceous earth as a filter aid, and (3) a step to eliminate microorganisms by passing the extract liquid filtered by the former step through a filter having a pore diameter of 0.25-0.8 &mum.COPYRIGHT: (C)2008,JPO&INPIT【課題】 キノコからタンパク分解活性を有する抽出物を製造する。食品分野で使用できる、タンパク分解活性が良好で、菌の汚染、着色やキノコ特有の臭いの問題がないキノコ抽出物の製造方法を提供する。【解決手段】下記の工程1~3を含む、タンパク分解活性を有するキノコ抽出物の製造方法。工程1:キノコから、PH5~7及び塩濃度10~300mMの緩衝液でキノコ抽出物を抽出する工程。工程2:前記工程で抽出した抽出液を、珪藻土を濾過助剤に使用して濾過する工程。工程3:前記工程で濾過した抽出液を、0.25~0.8μmのフィルターに通過させ除菌する工程。【選択図】 図1
