PROBLEM TO BE SOLVED: To provide a fried food for persons having difficulty in ingestion which allows the persons to crush easily with the tongue to form bolus while enjoying moderate crisp texture of the fried food.SOLUTION: A fried food 1 includes an included fry material 2 containing mincing meat, a coat layer 5 containing a grain flour, e.g. wheat flour, formed so as to coat the included fry material 2 and a skin layer based on carbohydrate. Collagen 8 is present at least in the vicinity of the coat layer 5 of the middle fry material 2, and an oil 7 absorbed from a frying oil 7 and collagen 8 are contained in fine cavities scattered in the skin layer 4.
