The present invention relates to frying powder comprising roasted grains and a preparation method thereof, wherein the ground state of roasted grains is maintained and the ground grain is added to conventional frying powder to provide unique texture and nutrients of grains, thereby allowing a consumer to readily identify and buy the frying powder of the present invention and use the same for frying. The method of the present invention comprises: a grain grinding step (S1) of grinding dried grains into particles of 0.5 to 2 mm^3 to form ground grain; a ground grain roasting step (S2) of roasting the ground grain obtained through the grain grinding step (S1) for 3 to 5 minutes in a roasting pan of 190 to 200°;C; a basic frying powder mixing step (S3) of evenly mixing 35 to 50 wt% of flour, 34 to 40 wt% of corn starch, 3 to 7 wt% of refined salt, and 13 to 18 wt% of an additive to produce basic frying powder; and a grain frying powder mixing step (S4) of mixing 50 to 80 wt% of the roasted ground grain passed through the ground grain roasting step (S2) and 20 to 50 wt% of the basic frying powder passed through the basic frying powder mixing step and evenly stirring the mixture. According to the present invention, the ground grain is mixed with frying powder to allow a consumer to identify grains with the naked eye, feel unique chewable texture and taste of the roasted ground grain, and take unique nutrients thereof.본 발명은 볶은 곡물알갱이를 파쇄한 상태를 유지시켜서 통상의 튀김가루에 함유시켜서 곡물의 고유식감과 영양성분을 부여하여 소비자가 용이하게 식별하여 구입해서 튀김요리를 할 수 있도록 하는 볶음곡물을 포함하는 튀김가루 및 그 제조방법에 관한 것이다.즉 말린곡물 알갱이를 0.5~2㎣의 입자로 파쇄하여 파쇄곡물을 형성하는 곡물 파쇄단계(S1)와; 상기 곡물 파쇄단계(S1)를 통해 파쇄한 곡물 알갱이를 볶음솥에서 190~200℃를 유지하여 3~5분 동안 복는 파쇄곡물 볶음단계(S2)와; 소맥분35~50 중량%와 옥수수전분 34~40 중량%와 정제염 3~7 중량%와 첨가제 13~18 중량%를 고르게 혼합하여 기초튀김가루를 생산하는 기초튀김가루 혼합단계(S3)와; 상기 파쇄곡물 볶음단계(S2)를 거친 볶음파쇄곡물 알갱이 50~80 중량%와 상기 기초튀김가루 혼합단계를 거친 기초튀김가루 20~50 중량%를 혼합하여 고르게 섞어주는 곡물튀김가루 혼합단계(S4)를 포함하는 볶음곡물 알갱이를 포함하는 튀김가루 제조방법을 통해 파쇄곡물 알갱이가 튀김가루에 혼합되어 소비자들이 육안으로 곡물알갱이를 확인할 수 있도록
