PROBLEM TO BE SOLVED: To provide a simple method for utilizing underused regions of undaria such as a stem, a stem near the base and a sporophyll as food materials or the like in a wide range of fields.SOLUTION: At least one of a stem 2, a stem near the base 3, and a sporophyll 4 of undaria is decomposed by the action of pectinase and/or lipase. Examples of the method for utilizing the decomposition product thus obtained include not only a method for using as food material, such as a method for using as foods and beverages in an unchanged form and a method for using as an additive health component or an additive thickener component for various kinds of foods and beverages, but also a method for using as an additive thickener component for medical drugs, quasi drugs, cosmetics and the like, and a method for using as feeds for cultured fish and shellfish.COPYRIGHT: (C)2015,JPO&INPIT【課題】ワカメの低利用部位、具体的には、茎、元茎、メカブを、食材などとして幅広く利用するための簡便な方法を提供する。【解決手段】ワカメの茎2、元茎3、メカブ4の少なくとも1つに対し、ペクチナーゼおよび/またはリパーゼを作用させることで、これらを分解することによる。こうして得られる分解物の具体的な利用方法としては、食材としての利用方法、例えば、そのままの形態で飲食品として利用する方法や、各種の飲食品に健康成分や増粘成分として添加して利用する方法が挙げられるが、医薬品、医薬部外品、化粧品などに増粘成分として添加して利用する方法や、養殖魚介類の餌として利用する方法もある。【選択図】図1
