Tea extracts are made by extracting tea leaves with an aq. soln. of ammonium bicarbonate or ammonia. In a pref. process, the tea leaves are extracted in a multi stage counterflow extraction process in which the extraction with aq. NH4HCO3 or ammonia is the penultimate stage. The extract may be subjected to a heat treatment at pH 3.5-8.5 at >70 degrees C, with addn. of H2O2 when the temp. exceeds 70 degrees C. Process is esp. useful for increasing the yield during the extn. of tea leaves with water.
