PROBLEM TO BE SOLVED: To provide fermented foods and drinks which contain a prescribed concentration of viable bacteria even during storage, with the progress of fermentation being inhibited during storage and a manufacturing method thereof.SOLUTION: The manufacturing method of fermented foods and drinks includes applying electric field pulses to fermented foods and drinks, so that a prescribed concentration of viable bacteria can be contained while the progress of fermentation is inhibited during storage. More specifically the manufacturing method of fermented foods and drinks having excellent flavor includes applying electric field pulses to the foods and drinks and/or raw materials thereof in the middle of fermentation, or to the foods and drinks after fermentation, so that a prescribed concentration of viable bacteria such as lactic acid bacteria can survive, with the reduction in pH associated with the progress of fermentation during storage being inhibited.
