PROBLEM TO BE SOLVED: To provide a new phospholipid organogel composition which has capability of carrying a great amount of a compound such as a self-assembly active ingredient at a low equilibrium time as it becomes fluid by heating and gets back to gel by cooling and which is heat-reversibly structured； a production method of the composition； and a use method of the composition as a drug-delivery medium or carrier in the fields of food or drink, cosmetic and personal care products.SOLUTION: Provided are: a phospholipid organogel composition comprising a phospholipid composition and an organic solvent (such as isopropyl myristate, glycerol, butyl laurate, tributylamine, triglyceride, ethylene glycol, isosorbide), a water-soluble polymer (such as xanthane gum, gellan gum, starch, chitin, alginic acid, agar, gelatin, maltodextrin, pectin), and a polar solvent (such as water)； a production method of the composition； and a use method of the composition in the fields of food, drink and cosmetic, personal care products or industrial products and the like.【課題】加熱すると流体になり、冷却するとゲルに戻って低平衝時間で自己集合有効成分等等の化合物を大量に運ぶ能力の持つする、熱可逆的構造化された新規リン脂質オルガノゲル組成物、及び該組成物の製造方法、食品又は飲料、化粧品、パーソナルケア製品の分野における薬物送達媒体又は担体としての使用方法の提供。【解決手段】リン脂質組成物及び有機溶媒（ミリスチン酸イソプロピル、グリセロール、ラウリン酸ブチル、トリブチルアミン、トリグリセリド、エチレングリコール、イソソルビド等）、水溶性ポリマー（キサンタンガム、ジェランガム、澱粉、キチン、アルギン酸、寒天、ゼラチン、マルトデキストリン、ペクチン等）、極性溶媒（水等）を含むことを特徴とするリン脂質オルガノゲル組成物。該組成物の製造方法、食品、飲料、化粧品、パーソナルケア製又は工業製品等分野への使用方法。【選択図】なし
