PROBLEM TO BE SOLVED: To provide a regular diet-like jelly-in-jelly, which contains a cut jelly having an appearance or taste similar to an ingredient such as vegetable, edible meat (animal meat, fish meat) or noodle, particularly, a regular diet-like jelly-in-jelly which has a texture or physical properties suitable as a food for a person with impaired masticatory and swallowing functions while securing an appearance or taste similar to a regular diet.SOLUTION: A regular diet-like jelly-in-jelly is obtained by mixing a cut jelly which contains turbidity modifier and has an absorbance of 0.2 or more in measurement of a 100-fold diluted solution thereof at a wavelength of 700 nm with a base material jelly solution followed by cooling and solidifying.COPYRIGHT: (C)2014,JPO&INPIT【課題】野菜、食肉(畜肉、魚肉)又は麺類などの具材に外観や味が類似したカットゼリーを含有する、常食風ゼリーインゼリーを提供する。特には、常食に外観や味が類似しながらも咀嚼・嚥下機能低下者の喫食に適した食感や物性を有する常食風ゼリーインゼリーを提供する。【解決手段】濁度調整剤を含有し、100倍希釈液を波長700nmで測定したときの吸光度が0.2以上のカットゼリーと、基材ゼリー液を混合後、冷却固化する。【選択図】図3
