A method for extracting purple rice anthocyanin is disclosed, which comprises the steps of: providing a rice bran powder as a base material that is generated by polishing a purple rice mechanically selecting a pericarp powder from the rice bran drying and sterilizing the pericarp powder and performing a color scale process to the pericarp powder to obtain a required anthocyanin powder. The advantage of the disclosed method is to have an extraction process that is entirely free from chemical solvent. Therefore, by applying the extracted purple rice anthocyanin in the health foods or care products, users can take these health foods and care products with less psychological and physiological burdens. Furthermore, the disclosed method has economic benefits superior to traditional chemical extraction approaches.
