The present invention relates to methods for preparing high purity gentiooligosaccharides, high purity gentiooligosaccharides obtained therefrom, and uses thereof. The methods of the present invention involve: adding a low purity gentiooligosaccharide to a liquid medium； subjecting the liquid medium to inoculation with a microorganism, followed by incubation and fermentation to consume glucose that is contained in the low purity gentiooligosaccharide； and subjecting the resulting fermentation broth to filtration and purification. According to the method of the present invention, high purity gentiooligosaccharides having a purity of at least 90% that can be used as alternatives to foods such as cocoa, chocolate, coffee, beer, tea, bread or confectionery product, and beverage or the main ingredients thereof.본 발명은 고순도 겐티오올리고당(gentiooligosaccharide)의 제조방법, 그로부터 얻어지는 고순도 겐티오올리고당 및 그의 용도에 관한 것으로, 액체 배지에 저순도 겐티오올리고당을 첨가하고 미생물을 접종한 후 배양시키고, 얻어지는 발효액을 여과 및 정제하는 본 발명의 방법에 따르면, 코코아, 초콜릿, 커피, 차, 제빵, 제과, 음료 등과 같은 식품 또는 이들 식품의 주원료의 대체제로서 유용하게 사용될 수 있는 순도 90% 이상의 고순도 겐티오올리고당을 불필요한 부산물의 생성 없이 용이하게 제조할 수 있다.
