For the production of ice cream products, a frozen core of ice cream supplied to a bath of liquid coating composition. The ice product provided with the coating is subsequently cooled in a cooling device, wherein the surface of the coating is cured to such an extent that the ice product can be packed. In order to accelerate curing according to the invention, the cooling device comprises a nozzle arrangement, at which the past ice product and from which it with a cryogenic cooling medium, in particular liquid nitrogen, is acted upon. By means of the direct action of the cooling medium hardens the surface of the ice product very quickly from and the amount of the cooling medium can be very accurately be adapted to the respective requirements.
