PROBLEM TO BE SOLVED: To provide a method for suppressing freeze-denaturation of meat capable of suppressing freeze-denaturation by inexpensive processing without generating sweetness, and meat suppressed in freeze-denaturation.SOLUTION: Meat is immersed in salt water with the concentration of 10 mass% or more so that the salt water permeates the center section of the meat. When the concentration of the center part of the salt water is lower than the concentration of the salt water at a center position between the external surface and the center part, the meat is taken out of the salt water.
