The present utility model relates in general to a process for the production of spray-dried young-coconut powder and products thereof. More specifically, the present utility model relates to a process for the production of spray-dried young-coconut powder formulated from the jelly-like meat of an immature coconut. According to this utility model, the spray-dried young coconut powder, combined with maltodextrin as the carrier agent, produces a beverage product that resembles the fresh coconut water in appearance, taste, and flavour upon dissolution in water.
