Disclosed is a process to produce a yeast extract comprising: a) Subjecting a yeast to autolysis at a pH between 4.5-9； and b) Subjecting the autolysate to solid/liquid separation and recovering the soluble fraction, whereby the solid/liquid separation in step b) is done at a pH of lower than 4.2 and higher than 1.0； and whereby the turbidity of the yeast extract measured at a dry matter content of 5% is less than 30 NTU.
