METHOD FOR EXTRACTING COLORING MATTER OF APPLE SKIN, METHOD FOR PRODUCING COLORING RAW MATERIAL BY EXTRACTION, COLORING RAW MATERIAL, AND FOODSTUFF USING THE COLORING RAW MATERIAL
PROBLEM TO BE SOLVED: To provide a method for extracting the coloring matter of apple skin, a method for producing a coloring raw material by extraction, the coloring raw material, and processed foodstuffs using the coloring raw material. ! SOLUTION: There is provided a method for extracting a coloring matter of an apple skin, which is included in the apple skin and has an absorbance (OD value) at 512 nm, using the extracting solvent including no alcohol. The method for extracting and producing the coloring raw material from the apple skin comprises heating the apple skin at 50-120掳C for 4 to 60 min using an organic acid solution of 鈮？%, and filtering to obtain a coloring matter-containing extract. There are also provided the coloring raw material and processed foodstuffs using the coloring raw material. The above extraction and production method has high extraction efficiency and is applicable to all kinds of apple without being bound by brand.
