PROBLEM TO BE SOLVED: To provide methods of breeding livestock which provide meat with high nutritional value, good flavor, and excellent melting in the mouth, to provide methods of increasing unsaturated fatty acids and free amino acids of meat, and to provide increasing agents.SOLUTION: In the livestock breeding method according to the present invention, the content of unsaturated fatty acids and/or free amino acids in the meat is increased by feeding a feed containing fermented milk. By feeding fermented milk to livestock, the concentration of unsaturated fatty acids in the fat layer of meat is increased, the concentration of saturated fatty acids is reduced, and thereby meat containing soft fat with good melting in the mouth can be obtained. In addition, by feeding fermented milk to livestock, the concentration of free amino acids in the lean meat part is increased and the smell of meat can be reduced.SELECTED DRAWING: Figure 1COPYRIGHT: (C)2017,JPO&INPIT【課題】栄養価が高く、風味が良好で、口溶けに優れた食肉が得られる家畜の飼育方法、食肉の不飽和脂肪酸及び/又は遊離アミノ酸の増加方法及び増加剤を提供する。【解決手段】本発明に係る家畜の飼育方法では、発酵乳を含む飼料を給餌することによって、食肉の不飽和脂肪酸及び/又は遊離アミノ酸の含有量を増加させる。家畜に発酵乳を給餌することによって、食肉の脂肪層の不飽和脂肪酸の濃度を増加させ、飽和脂肪酸の濃度を減少させて、口溶けが良く、柔らかい脂肪を含む食肉を得ることができる。また、家畜に発酵乳を給餌することによって、赤身部分の遊離アミノ酸の濃度を増加させ、食肉の臭みを低減することができる。【選択図】図1
