The present invention relates to a method for concentrating protein in cereal flour, a cereal flour containing protein concentrated by the method, and a feed additive comprising cereal flour containing the concentrated protein. In a method for concentrating protein in cereal flour according to an embodiment of the present invention, the cereal flour is treated with an enzyme to increase the water-soluble sugar content in the raw material, which is increased by bacterial or yeast inoculation and fermentation procedures. When the water-soluble sugar is removed, the protein can be concentrated, and the effect of increasing the protein content ratio and the function of cereal flour as a protein source are enhanced.
