The purpose of the present invention is to provide a method, said method comprising selecting a portion of an oyster meat essence extract containing a larger amount of antioxidants having high ORAC value and employing an extraction method, whereby the content of the antioxidants having high ORAC value can be increased, so that a large amount of a beneficial oyster meat extract can be extracted at a high efficiency and thus an oyster meat essence containing a large amount of the antioxidants having high ORAC value can be produced.The method is characterized by comprising: housing oyster meat in an extraction container containing water; extracting the oyster meat essence to give a liquid extract; pouring the liquid extract into a centrifuge; rotating the liquid extract at such a centrifugal acceleration as to allow the separation and takeoff of antioxidants having higher antioxidative power and higher ORAC value therefrom; and separating the antioxidants having higher antioxidative power and higher ORAC value to thereby give an oyster meat essence containing a large amount of the antioxidants having high antioxidative power and high ORAC value.
