The purpose of the present invention is to provide a method, said method comprising selecting a portion of an oyster meat essence extract containing a larger amount of antioxidants having high ORAC value and employing an extraction method, whereby the content of the antioxidants having high ORAC value can be increased, so that a large amount of a beneficial oyster meat extract can be extracted at a high efficiency and thus an oyster meat essence containing a large amount of the antioxidants having high ORAC value can be produced.The method is characterized by comprising: housing oyster meat in an extraction container containing water extracting the oyster meat essence to give a liquid extract pouring the liquid extract into a centrifuge rotating the liquid extract at such a centrifugal acceleration as to allow the separation and takeoff of antioxidants having higher antioxidative power and higher ORAC value therefrom and separating the antioxidants having higher antioxidative power and higher ORAC value to thereby give an oyster meat essence containing a large amount of the antioxidants having high antioxidative power and high ORAC value.
