PROBLEM TO BE SOLVED: To provide a fat and oil composition kneaded with bread dough, giving bread having plenty of bulkiness and soft palatability even when a large amount of liquid fat and oil is used, though it is known that the fat and oil disturbs bread making performance, an oil-in-water type emulsion kneaded with the bread dough using the fat and oil composition and a method for producing bread using the composition.

SOLUTION: The fat and oil composition kneaded with bread comprises fat and oil containing SSS triglycerides (S denotes a 14, 16, 18, 20, 22 or 24C saturated fatty acid residue) and <5.0 wt.% trans unsaturated fatty acid. The oil-in-water type emulsion kneaded with bread using the fat and oil composition is also provided.
