PROBLEM TO BE SOLVED: To provide a quality improver for food, which has a simple production method and excellent storage stability and maintains a texture and flavor immediately after processing and cooking for a long period of time when added to various foods.
SOLUTION: The quality improver for food contains an emulsifying agent, a saccharide and a lamella structure of a diacetyl tartaric acid monoglyceride. In the preferable illustrative embodiment, the diacetyl tartaric acid monoglyceride forms a lamella structure, the emulsifying agent is a sucrose fatty acid ester and/or a polyglycerol fatty acid ester and the saccharide is an oligosaccharide.
