The present invention relates to a composition comprising an antioxidant system, in particular for use as a food composition. In a first aspect the invention provides a composition comprising an antioxidant system obtainable by an extraction method comprising the steps of i) contacting an apolar extractant with a combination of plant powders to prepare an extract, wherein the combination of plant powders comprises: (1) ginger powder having a particle size of less than 800 µm, (2) sage powder having a particle size of less than 500 µm, (3) rosemary powder having a particle size of less than 500 µm, wherein the ginger powder (G), the sage powder (S), and the rosemary powder (R) are present in a weight ratio of G : S : R = 1 to 4 : 1 to 3 : 1 to 3； and ii) optionally separating the extract from at least part of the residue of the plant powders.La présente invention concerne une composition comprenant un système antioxydant, destinée à être utilisée en particulier en tant que composition alimentaire. Selon un premier aspect, une composition selon l'invention comprend un système antioxydant pouvant être obtenu au moyen d'un procédé d'extraction comprenant les étapes consistant : i) à mettre en contact un agent d'extraction apolaire avec une association de poudres végétales en vue de préparer un extrait, l'association de poudres végétales comprenant : (1) une poudre de gingembre présentant une taille des particules inférieure à 800 µm, (2) une poudre de sauge présentant une taille des particules inférieure à 500 µm, (3) une poudre de romarin présentant une taille des particules inférieure à 500 µm, la poudre de gingembre (G), la poudre de sauge (S) et la poudre de romarin (R) étant présentes selon un rapport pondéral de G : S : R = 1 à 4 : 1 à 3 : 1 à 3 ； et ii) éventuellement à séparer l'extrait d'au moins une partie du résidu des poudres végétales.
