Powder comprises greater than 90%, preferably 100% of egg white, where the powder has a density of less than 0.5 grams per liter, preferably 0.35-0.43 grams per liter. An independent claim is included for a food composition in the form of liquid or semi-liquid comprising the egg white in an amount by weight greater than at least twice that of egg yolk, preferably at least greater than ten times of the powder, which is dissolved in the food composition.
