FIELD: food industry. ^ SUBSTANCE: according to proposed method, veal or low-fat pork are boiled in salted water until ready, cooled at room temperature and cut in large cubes. Onion and cucumbers are chopped and salted. Meat, onion, cucumbers are mixed with dressing, which consists of sweet pepper, onion and hot pepper crushed in mincing machine, tomato juice, salt and sugar. Prepared mix is simmered for 120 minutes with further addition of ground cinnamon, clove, black ground pepper, 6% of vinegar. Afterwards the mix is finally simmered for 60 minutes. ^ EFFECT: method makes it possible to increase assortment of consumed products with unique consumer properties.
