PURPOSE: Provided is a method for aging chicken meat using the extracts of lacquer and herbal medicines which contain abundant beneficial components to a human body. CONSTITUTION: The method for aging chicken meat using the extracts of lacquer and herbal medicines comprises the steps of: boiling lacquer, Rhus chinensis M, Saururus Chinesis(Lour) Bail, Cnidium officinale, Coriolus versicolor, Crataegus pinnatifida, Rehmanniae radix preparat, Polygala tenuifolia Willdenow, green tea, deer antler, ginger, Cuscuta australis R. Brown and the like in water; filtering the solution to separate solids and extract; cooling the extract then adding onion juice, garlics, ginger and pepper thereto; and putting a chicken into the extract then aging it for a certain period of time.
