The invention relates to a method of preserving fresh algae or micro-algae, such as fresh spirulina, in a modified atmosphere package, said method being of the type where: a) the product is placed into a package； b) a protective atmosphere is introduced into the package； and c) the package is sealed. The invention is characterized by the following measures: - the product is placed into an at least partially opaque package, which is fully or partially permeable to oxygen and CO2, or which is fully or partially micro-perforated； - the atmosphere has a low oxygen content, preferably of between 3% and 12%, and a CO2 content of at least 5%, preferably at least 10%, for example of between 5% and 30%； - once sealed, the package is cold-stored (i.e at a temperature of preferably between -1°C and 10°C, and even more preferably between 0°C and 4°C.Procédé de conservation des algueset micro-alguesfraiches ABREGE L'invention proposeun procédé de conservation d'algues ou micro- alguesfraiches, par exemple de la spiruline fraîche, dans un emballage sous atmosphère modifiée, procédédu type où: a) on positionne le produitdans un emballage； b) on introduit dans l'emballage une atmosphère de protection； c) on scelle l'emballage； se caractérisant par la mise en œuvre des mesures suivantes: -le produit est positionné dans un emballage au moins en partie opaque, emballage qui est en tout ou partie perméable àl'oxygèneet au CO 2, oubien encore en tout ou partie micro-perforé； -ladite atmosphère comporte une teneur faible en oxygène, préférentiellement comprise entre 3et 12%, et une teneur en CO 2 d'aumoins %, préférentiellement d'au moins 10%, par exemple comprise dans la gamme -30 %；15 - l'emballage une fois fermé est stocké au froid (i.e à une température préférentiellement comprise entre -1°C et 10°C, et encore plus préférentiellement comprise entre 0 et 4°C).
