The present invention relates to a method of manufacturing a non-heating beverage containing barley sprouts by using an UV sterilizer. The method includes: a step (a) of making a fermented houttuynia cordata sprout material by mixing fructooligosaccharide with a fermented houttuynia cordata liquid made by fermenting and filtering a mixture of barley sprouts, wheat sprouts, houttuynia cordata, lactobacillus plantarum, fructooligosaccharide, and water； a step (b) of making barley sprout juice, angelica keiskei juice, and kale juice by juicing, filtering, and sterilizing barley sprouts, angelica keiskei, and kale； a step (c) of preparing calamansi puree by juicing calamansi fruits； a step (d) of preparing orange and apple concentrates by juicing, filtering, and concentrating oranges and apples； and a step (e) of sterilizing and filtering a mixture, which is made by mixing the fermented houttuynia cordata sprout material of the step (a), the barley sprout juice, the angelica keiskei juice, and the kale juice of the step (b), the calamansi puree of the step (c), and the orange and apple concentrates of the step (d) with fructooligosaccharide and water, by using UV rays.본 발명은 (a) 새싹보리, 밀싹, 어성초, 락토바실러스 플란타룸, 프락토올리고당 및 물을 혼합한 혼합물을 발효 및 여과한 어성초 혼합 발효액에 프락토올리고당을 혼합하여 어성초 새싹 발효물을 제조하는 단계； (b) 새싹보리, 신선초 및 케일을 각각 착즙 및 여과한 후 자외선 살균하여 새싹보리 착즙액, 신선초 착즙액 및 케일 착즙액을 제조하는 단계； (c) 깔라만시 열매를 착즙하여 깔라만시 퓨레를 준비하는 단계； (d) 오렌지 및 사과를 각각 착즙 및 여과한 후 농축하여 오렌지 농축액 및 사과 농축액을 준비하는 단계； 및 (e) 상기 (a)단계의 제조한 어성초 새싹 발효물, 상기 (b)단계의 제조한 새싹보리 착즙액, 신선초 착즙액 및 케일 착즙액, 상기 (c)단계의 준비한 깔라만시 퓨레, 상기 (d)단계의 준비한 오렌지 농축액 및 사과 농축액과 프락토올리고당 및 물을 혼합한 혼합물을 자외선 살균 및 여과하는 단계를 포함하여 제조하는 것을 특징으로 하는 비가열 새싹보리 함유 음료의 제조방법 및 상기 방법으로 제조된 비가열 새싹보리 함유 음료에 관한 것이다.
