CONSTITUTION: A method for producing amino acids from livestock blood comprises the steps of: spraying Aspergillus oryzae to places and paths where blood exists in slaughterhouses (10) for preventing contamination due to various bacteria； collecting bloods from slaughterhouses； and adding protease to the collected blood and decomposing proteins in the collected blood.본 발명은 가축의 생 혈액으로부터 아미노산을 생산하기 위한 생산방법에 관한 것으로서, 더욱 상세하게는 가축의 도축시 발생하는 혈액을 수집하는 과정에서 잡균의 오염을 방지함과 동시에 효소를 이용하여 단시간에 단백질을 분해할 수 있는 아미노산의 생산방법에 관한 것이다. 본 발명의 아미노산의 생산방법은 잡균의 오염을 방지하기 위해 도축장의 혈액 발생지 및 상기 혈액이 이동하는 통로에 황국균을 살포하는 전처리단계와, 도축장에서 발생한 혈액을 수집하는 수집단계와, 수집단계에서 수집된 혈액에 단백질 분해효소를 가하여 상기 혈액 중의 단백질을 분해하는 분해단계를 포함한다.
