PROBLEM TO BE SOLVED: To provide an oily food material for coating a frozen desert for coating with the oily food material such as chocolates and having suppressed thickening by a trace quantity of water contamination in a coating process.SOLUTION: There are provided an oily food material for coating a frozen desert containing starch hydrolysate with DE value of 10 to 50, one or more kinds selected from pregelatinized starch, hardly digestible dextrin, polydextrose of 1 to 10 wt.% and sucrose fatty acid ester with HLB of 5 to 9 of 0.05 to 0.5 wt.% and having a value of (viscosity at 1 minutes after hydrogenation)÷(viscosity at initial) of less than 2.5.SELECTED DRAWING: None【課題】チョコレート類などの油性食品素材でコーティングする、被覆工程中の微量の水分混入による増粘が抑制された、冷菓被覆用油性食品素材の提供。【解決手段】DE値が10~50である澱粉加水分解物、α化澱粉、難消化性デキストリン、ポリデキストロースから選ばれる1種類ないしは2種類以上を1~10重量%、及びHLB5~9のショ糖脂肪酸エステルを0.05~0.5重量%含有し、(水添加1分後の粘度)÷(開始時の粘度)の値が2.5未満である、冷菓被覆用油性食品素材、及び冷菓被覆用油性食品素材の増粘抑制方法。【選択図】なし
