PROBLEM TO BE SOLVED: To provide a mixed saccharide composition containing psicose with improved sweetness degree and sweetness quality of the psicose.SOLUTION: Provided is a mixed saccharide composition with improved sweetness quality and non-crystallization, in which the glucose content is 24 parts by weight or lower, based on 100 parts by weight of the solid content of all saccharides contained in the mixed saccharide composition containing psicose, glucose and fructose. The mixed saccharide composition has a fructose content of lower than 30 parts by weight, based on 100 parts by weight of the total solid content of glucose, psicose and fructose contained in the mixed saccharide composition. Further, the mixed saccharide composition has the fructose content of 25 parts by weight or lower, and the total content of fructose and psicose of higher than 70 parts by weight, based on 100 parts by weight of the total solid content of glucose, psicose and fructose contained in the mixed saccharide composition.EFFECT: A saccharide crystal does not precipitate in the mixed saccharide composition including the psicose stored under the condition of at -20 to 38°C for 1 year.SELECTED DRAWING: Figure 3COPYRIGHT: (C)2020,JPO&INPIT【課題】プシコースの甘美度及び甘美質を改善した、プシコース含有混合糖組成物の提供。【解決手段】プシコース、葡萄糖及び果糖を含有する混合糖組成物に含まれている糖類全体の固形分含有量100重量部を基準にして、葡萄糖含有量が24重量部以下である、甘美質改善及び無結晶化混合糖組成物。混合糖組成物に含まれている葡萄糖、プシコース及び果糖の合計固形分含有量100重量部を基準にして、果糖の含有量が30重量部未満である、前記混合糖組成物。更に、混合糖組成物に含まれている葡萄糖、プシコース及び果糖の合計固形分含有量100重量部を基準にして、果糖の含有量が25重量部以下であり、果糖とプシコースの合計含有量が70重量部を超えるものである、前記混合糖組成物。【効果】前記のプシコースを含む混合糖組成物は、-20~38℃の温度で1年間保管する条件で糖結晶が析出されない。【選択図】図3
