PROBLEM TO BE SOLVED: To provide skin-evaporated fresh fishes that are produced from fresh fish raw materials or frozen fish raw materials, maintain freshness, original appearance and taste, and are superior in taste and texture, and to provide a production apparatus thereof that enables hygienic production with high yield without using human hands.SOLUTION: Skin-evaporated fresh fishes are produced in such a way that a selected wavelength laser light which is well absorbed by water is controlled to be sequentially irradiated on the skin entire surfaces of fresh fish raw materials. In the skin-evaporated fresh fish, a dermis beneath the skin is not damaged and only the skin evaporates, the appearance, freshness and taste of the original fresh fish raw material are maintained, thereby the taste and texture are superior, and the skin-evaporated fresh fish can be eaten fresh.【課題】生鮮魚原料あるいは凍結魚原料を使用して製造される、鮮度や本来の外観や味が維持され食味・食感に優れる表皮蒸散生鮮魚の提供および人の手によらず、衛生的に、高歩留まりで、容易に製造できる製造装置の提供。【解決手段】生鮮魚原料の表皮全面に、水分吸収性に優れる選択波長のレーザー光を制御して順次均一に照射して得られる、前記表皮の下部の真皮が損なわれず、前記表皮のみが蒸散しており、生鮮魚原料本来の外観や鮮度や味が維持され食味・食感に優れる、生のままでも食することができることを特徴とする表皮蒸散生鮮魚によって課題を解決できる。【選択図】図1
