PROBLEM TO BE SOLVED: To provide a method for again pickling pickled Chinese cabbages. SOLUTION: This method for producing pickled Chinese cabbages containing the flavor of green tea comprises dissolving a mixture of three materials comprising pulverized green tea, ground ginger and ground garlic in a stock in a paste-like state to prepare the sauce, and again pickling Chinese cabbages preliminarily pickled in raw salt in the prepared sauce. Since the taste of the pickled Chinese cabbages is not constant, the pickled Chinese cabbages can eliminate a dissatisfaction in the present satiated era. Since the strong smells of the garlic and ginger of spices can be controlled by the fermentation, the pickled Chinese cabbages can be eaten by children, and are highly good for health.
