Glutathione has various cosmetic effects such as high melanin production inhibitory action and antioxidant action, but it is classified as a pharmaceutical in Japan and cannot be used as food. However, recently, such functions are required for foods. A glutathione-containing yeast extract extracted from yeast that has been eaten and has been confirmed to be safe has been confirmed to have an inhibitory effect on melanin production by mouse B16 melanoma cells. It was confirmed that an excellent melanin production inhibitory effect of 2 times or more was obtained. [Selection] Figure 1【課題】グルタチオンには高いメラニン産生抑制作用や抗酸化作用等様々な美容効果が知られているが、国内では医薬品に分類されており食品としての利用が出来ない。しかしながら、特に最近では食品にそのような機能が求められている。【解決手段】食経験があり、安全性が認められている酵母から抽出したグルタチオン含有酵母抽出物について、マウスＢ１６メラノーマ細胞によるメラニン産生抑制効果を確認したところ、同濃度のグルタチオン単体と比較して、２倍以上の優れたメラニン産生抑制効果が得られることを確認した。【選択図】図１
