PROBLEM TO BE SOLVED: To provide a method for producing alpharized rice, free from the need of setting a soaking process, and retaining a rice grain shape.SOLUTION: The method for producing the alpharized rice includes sequentially a pressure steaming process S1 of steaming rice grains as the raw material by pressure steam, a boiling process S3 of alpharizing the rice grains after the pressure steaming process, a high-temperature drying process S4A of drying the rice grains at high temperature after the alpharizing process, and a low-temperature drying process S4B of drying at low temperature lower than that of the high-temperature drying process.
