The present invention relates to a method for extracting mulberry leaf proteins. The method comprises the steps of: (a) steam-blasting mulberry leaves (b) adding water to the steam-blasted mulberry leaves in the step (a) and extracting the same (c) filtering the extract extracted in the step (b) (d) adding pH regulating reagent to the filtrate filtered in the step (c) to precipitate the filtrate and (e) centrifuging the precipitate precipitated in the step (d). Using the present invention, the crosslinking of components of the mulberry leaves is destroyed, and the mulberry leaf proteins can be efficiently extracted by increasing porosity and hydrophilicity of the mulberry leaves.본 발명은 뽕잎 단백질 추출방법에 관한 것으로, (a) 뽕잎을 증기폭쇄시키는 단계 (b) 상기 (a) 단계에서 증기폭쇄된 뽕잎에 물을 넣고 추출하는 단계 (c) 상기 (b) 단계에서 추출된 추출물을 여과하는 단계 (d) 상기 (c) 단계에서 여과된 여액에 pH 조절용 시약을 첨가하여 침전시키는 단계 및 (e) 상기 (d) 단계에서 침전된 침전물을 원심분리시키는 단계를 포함하는 것을 특징으로 한다. 본 발명을 이용하면 뽕잎을 이루는 구성물질들의 가교결합이 파괴되고 뽕잎의 다공성과 친수성을 증가시켜 뽕잎 단백질을 효율적으로 추출할 수 있다.
