The present invention relates to a process for producing fermented milk, including adding to a fermented milk mix a starter in an amount of from 0.2 to 0.8% by weight with respect to the total amount of the fermented milk mix； reducing the dissolved oxygen concentration in said mix to 5 ppm or less； and conducting a fermentation after said addition of the starter and said reduction of the dissolved oxygen concentration.本發明之發酵乳製造方法包括於發酵乳混合物(mix)中，以相對於發酵乳混合物全量為0.2至0.8重量%的量，添加引酵物(starter)，混合物中的溶存氧濃度降低於5ppm以下，以及於引酵物的添加及溶存氧濃度的降低之後進行發酵。
