The present invention relates to a process forproducing fermented milk, including adding to a fermentedmilk mix a starter in an amount of from 0.2 to 0.8% byweight with respect to the total amount of the fermentedmilk mix; reducing the dissolved oxygen concentration insaid mix to 5 ppm or less; and conducting a fermentationafter said addition of the starter and said reduction ofthe dissolved oxygen concentration.
