A method of manufacturing herbal sesame oil by soaking pre-roasted sesame in herbal extract, roasting and then subjecting to oil expelling is provided to produce oil containing medicinal efficacy of herbs, ginseng or green tea while retaining a nutty taste of sesame oil. Sesame is roasted at 50 to 80deg.C, soaked in herbal extract, dried, roasted at 100 to 200deg.C for 10 to 60min and subjected to oil expelling. The herbal extract is obtained by mixing 100 parts by weight of water and 0.5 to 20 parts by weight of one or more components selected from herbs, ginseng or green tea and extracting with water at 80 to 100deg.C for 1 to 3hr. The herbs contain Angelica root, Jujube fruit, Cnidium root, Paeonia root or Prepared Rehmannia root.
