PROBLEM TO BE SOLVED: To provide an emulsifier for effectively preventing cohesion of thick milk by regulating the median diameter of emulsified particles contained in the thick milk to be &le1.0 &mum even when a low-pressure homogenizing treatment of <25 MPa is used, especially to be &le1.06 &mum even after sterilizing treatment.
SOLUTION: The emulsifier for thick milk includes a fatty acid ester of sucrose, monoglyceride of succinic acid and distilled monoglyceride, or a combination thereof.
