The present invention relates to a manufacturing method of a nanocapsule containing a red ginseng extract and a nanocapsule containing a red ginseng extract manufactured therefrom, wherein the manufacturing method comprises the steps of: (A) manufacturing a gelatin red ginseng mixed solution by dispersing a red ginseng extract in a gelatin solution； and (B) manufacturing a capsule by falling chitosan at a constant speed while continuously stirring the gelatin red ginseng mixed solution. According to the present invention, unique bitter taste of red ginseng can be improved without changing unique properties (ginsenoside solubility, improvement effects of blood circulation).본 발명은 젤라틴 용액에 홍삼 추출물을 분산시켜 젤라틴 홍삼 혼합용액을 제조하는 단계 (A)； 및 상기 젤라틴 홍삼 혼합용액을 계속 교반하면서 키토산을 일정 속도로 떨어뜨려 캡슐을 제조하는 단계 (B)；를 포함하는 과정으로부터 제조되는 것을 특징으로 하는 홍삼 추출물 함유 나노캡슐의 제조방법 및 이로부터 제조된 홍삼 추출물 함유 나노캡슐에 관한 것으로, 본 발명에 의하면, 홍삼의 특유의 특성(진세노사이드 용해도, 혈행 개선 효과)은 변화시키지 않으면서, 홍삼 특유의 쓴맛을 개선할 수 있다.
