PROBLEM TO BE SOLVED: To provide an oil and fat composition capable of manufacturing filling and/or topping good in shape keeping property, mouth melting, appearance and plasticity as well as output of flavor depending needs even with small content of trans aliphatic acid or lauric acid, a water-in-oil type emulsified oil and fat composition containing the oil and fat composition, a food containing the water-in-oil type emulsified oil and fat composition and a manufacturing method of the food using the composition.SOLUTION: There is provided a composition for filling and/or topping having trans aliphatic acid content of 5 mass% or less, lauric acid content of 5 mass% or less, behenic acid content of 0.3 mass% to 5 mass% in whole constituent aliphatic acid, SSS content of 2 mass% to 7 mass%, S2U content of 16 mass% to 29 mass% and UUU content of 10 mass% to 35 mass% in triglyceride, mass ratio of SSU and SUS, SSU/SUS of 1.5 to 4.0 and mass ratio of P and S, P/S of 0.6 to 0.9.SELECTED DRAWING: None【課題】 トランス脂肪酸やラウリン酸の含有量が少なくても、保型性、口溶け、外観及び可塑性が良好で、必要に応じて風味の出方も良好なフィリング及び/又はトッピングを製造することができる油脂組成物、該油脂組成物を含む油中水型乳化油脂組成物、該油中水型乳化油脂組成物を含む食品、及び該組成物を用いた食品の製造方法を提供する。【解決手段】 構成脂肪酸全体中、トランス脂肪酸の含有量が5質量%以下、ラウリン酸含有量が5質量%以下及びベヘン酸の含有量が0.3質量%以上5質量%以下であって、トリグリセリド全体中、SSSの含有量が2質量%以上7質量%以下、S2Uの含有量が16質量%以上29質量%以下及びUUUの含有量が10質量%以上35質量%以下であって、並びにSSU及びSUSの質量比SSU/SUSが1.5以上4.0以下であり、P及びSの質量比P/Sが0.6以上0.9以下であることを特徴とするフィリング及び/又はトッピング用油脂組成物。【選択図】なし
