The present invention relates to thistle powder-based whole-grain meal substitute manufacturing and, more particularly, to a method for manufacturing a whole-grain meal substitute using thistle powder, by which the thistle powder and organic cereal are mixed with each other such that satiety can be felt with the meal substitute. The present invention is manufactured by the thistle powder and gelatinized whole-grain brown rice, whole-grain sorghum, sesame grains, and black sesame grains being mixed with mixed cereal powder and oligosaccharide powder and crystal fruit sugar being added. The materials mixed in the whole-grain meal substitute are manufactured by mixing of 3 to 20 parts by weight of the thistle powder, 2 to 8 parts by weight of the whole-grain brown rice, 1 to 5 parts by weight of the whole grain sorghum, 1 to 3 parts by weight of the sesame grains, and 1 to 3 parts by weight of the black sesame grains with respect to 100 parts by weight of the mixed cereal powder. The mixed cereal powder is manufactured by mixing of 70 to 100 parts by weight of brown rice powder and 50 to 70 parts by weight of black soybean powder with respect to 100 parts by weight of barley powder. The present invention relates to the method for manufacturing the meal substitute by mixing the whole grains with the thistle powder rich in fiber. Since the thistle powder is used, the meal substitute can be healthful and pollution-free.본 발명은 곤드레 분말을 이용한 통곡물 선식의 제조에 관한 것으로 곤드레분말과 유기농 곡물을 혼합하여 한끼 식사의 대용식으로 충분히 포만감을 가질 수 있는 곤드레 분말을 이용한 통곡물 선식의 제조방법에 관한 것이다. 본 발명은 곡물 혼합분말에 곤드레분말과 알파화시킨 통곡물현미, 통곡물수수, 참깨알곡 및 검은깨알곡을 혼합하고 올리고당분말 및 결정과당을 첨가하여 제조한다. 상기 통곡물 선식에 혼합되는 원료는 곡물 혼합분말 100중량부에 곤드레분말 3~20중량부, 통곡물현미 2~8중량부, 통곡물 수수 1~5중량부, 참깨알곡 1~3중량부, 검정깨알곡 1~3중량부의 비율로 혼합하여 제조하고, 상기 곡물 혼합분말은 보리가루 100중량부에 현미가루 70~100중량부, 검정콩가루 50~70중량부의 비율로 혼합하여 제조한다. 본 발명은 섬유질이 풍부한 곤드레 분말을 통곡물과 혼합하여 한끼 식사를 대신할 수 있는 대용식의 제조방법에 관한 것으로 곤드레 분말을 이용하기 때문에 저공해 건강 기능성 대용식을 제공하기 위한 것이다.
