PROBLEM TO BE SOLVED: To provide a method of producing a fried food which prevents black discoloration of a coating material of fried foods using a tyrosine-containing ingredient.SOLUTION: A method of producing a fried food includes a step of adhering batter liquid to a tyrosine-containing ingredient and a step of frying the ingredient adhered with the batter liquid, and the batter liquid used contains a water-soluble oxidation inhibitor. The batter liquid preferably contains 50 ppm or more of the oxidation inhibitor, and the oxidation inhibitor is preferably ascorbic acid and/or its salt.
