[Problem] The purpose of the present invention is to provide a method for manufacturing a meat-like dry protein processed food having a meat-like flavor and texture suitable for an instant food ingredient. [Solution] Provided is a meat-like dry protein processed food, in which a porous textured protein material, which is formed by being pressurized, heated, and extruded by an extruder, is reconstituted in water, dewatered, flavored, has oil added thereto, and is then heat-dried with hot air of 100 to 120°C to shrink the protein portion, and the restorability of the porous textured protein material is controlled by regulating the porous structure. The meat-like dry protein processed food has a meat-like flavor and excellent texture when reconstituted in hot water.
